Sponge cake in mould

Ingredients

For the dough:
  • 6 eggs
  • 4 tablespoons warm water
  • 210 g sugar
  • 115 g white wheat flour
  • 110 g cornstarch
  • 2 level teaspoons baking powder
  • 2 tablespoons cocoa powder
For the filling:
  • 300 ml chilled heavy whipping cream
  • 120 g sugar
  • 300 g mascarpone cheese
  • 1 pack vanilla sugar
  • grated lemon zest

Preparation

1 Separate the egg yolks from the egg whites. Whisk together the egg yolks and sugar.
2 Beat the egg whites with some warm water until stiff peaks form.
3 Add the stiff beaten egg whites to the egg yolk and sugar mixture and whisk together quickly.
4 Add flour combined with baking powder and cornstarch to the ingredients.
5 Pour the mixture into a cake mould. Line the bottom of the mould with parchment paper.
6 Beat whipping cream, sugar and vanilla sugar in large bowl until peaks form.
7 Add mascarpone, lemon zest and whisk until blended.
